My friend made one of those, except he made the mistake of using a very salty rub in large quantities. It was so salty that it hurt to eat it.

Almost like what I had at Wild Rose last weekend. A huge turkey leg wrapped in bacon, with a side of real cranberries and the best mashed sweet potatoes I've ever had. It was a challenge to finish it off, but man... so good. Did I mention it was only $14?

Here is a deer roast I smoked this summer. I rolled some rosemary and garlic into it, then wrapped it with a pound of bacon. Set it up on a bed of mirepoir and put it on indirect in the BBQ for about 3 hrs with some crab apple smoke.



There wasn't anything left, so it must have been good  ;)

That sir is some beautiful bacon!  Have never tried deer, closest I've gotten is caribou.

Here's how it turned out last night, one of the best meat loafs I've ever tasted.  I didn't do any of the work aside from take pictures of the bacon.  Now that I look at these pics, I don't want to eat bacon or meatloaf for a while, but it was yummy.
