Wow, I thought a "grass grill" method was a thing for a second... Even tried to Google it  :o

I'm making suicide wings in my Bradley digital smoker this weekend: dry rub, smoke, and then an interesting sweet habanero sauce. I'll try ghost peppers once I'm comfortable with the sauce recipe.

Going to try to use mustard + Franks Red Hot to make the rub stick  >:D

I'll document the process if I remember to.

New favourite muffin recipe:

1 cup brown sugar
1/2 melted butter
Whisk until smooth.
2 eggs
Whisk in one at a time until integrated
1/2 cup of crushed fruits
1 teaspoon of vanilla
Optional; chocolate chips (normally required)
Mix and match to your desire on these two
Fix in the extras a little bit.

In separate bowl, mix together
2 cups flour
2 teaspoons baking powder
Dash of salt

Once mixed, fold into the wet mix using as little stirs as possible. Like 20 folds and done.
Have 1/2 cup of milk at the ready to throw in in case it's a little dry looking.

Scoop into muffin pan, throw in oven for... A time until a fork comes out clean.

Inhale.

Or post pictures them on social media, who am I to judge.

(these ones are cherry and white chocolate chip)

This thread is a gold mine. I can definitely draw some suggestions from here on how to surprise the gf now and then with some treats.  >:D

RedndWhite, that muffin recipe looks delicious. I'll be attempting it next week.

Tandoori Pork Chops

Ingredients
- Pork chops or however much
- 2 cups of peach yogurt
- Chilli powder
- Tandoori seasoning
- 1 cup rice

Steps
- Mix seasonings with yogurt, put chops in the yogurt and marinate for 8 hours.. or 2 days... you know, if you forget.
- After marinating, turn your favorite frying pan on to medium, throw just the chops on with some of the marinade, and cook until done.
- Remove the chops from the pan, leaving all of the goodies in the pan, throw in the rest of the unused marinade, along with the cup of rice, mix and cook the rice slowly, until as much of the liquid has been absorbed. at a little bit of water to loosen of the good stuff stuck on the bottom of the pan. (Almost like a risotto... actually, it is a risotto)
- Remove the rice via plate or tupperware.

Additional things
Stirfry veggies (all on you, man), into the pan with some butter/oil of your choice, cook the veggies until your preferred level of cooked.

Plate everything and tadaa, delicious tandoori pork chops and risotto rice and stirfried veg. Serves about three meals.

Ginger Peach Chicken

Ingredients:
- Chicken, as much as you want of whatever cut you like
- 1/4 cup soy sauce
- 1/4 cup peach vodka or schnapps
- 1/4 cup olive oil.
- 1/4 cup brown sugar
- 2 teaspoons ground ginger (fresh) or 4 teaspoons ground ginger (powdered)

Make sure the chicken is thawed. Mix the soy sauce, peach flavoured booze, olive oil, brown sugar, and ginger together, pour over the chicken, marinate for about 8 hours. I used drumsticks, so I moved them over to a large baking sheet, lined with aluminum foil... FOIL. *ahem*. Oven to 425F.

Take a little extra brown sugar and sprinkle lightly over the chicken, then brush marinate sauce on both sides of the chicken, throw in the oven for 35 minutes. Flipping halfway and marinating the other side at this time.

Take out of the oven after 35 minutes (or internal temp blah blah has been reached) and let sit for 5 minutes. Serve.

This did a club pack size of drums with a little extra to spare. The skin gets really crunchy and the flavour is darn good. Though I think next time I'm gonna use a little bit less soy sauce.

4lbs bacon + 4lbs sausage. Beer and Caesars not optional


The bacon weave


Apply sausage over bacon, add bacon on top of sausage


Roll into log


Bake on BBQ at 350 until cooked


Delicious, even better the next morning fried in a pan

OK, so I made the most amazing pumpkin alfredo tonight. I just kind of eyeballed the amounts.

Ingredients:
~3 tbsp unsalted butter
A bunch of dairy. I used 10% coffee cream
Parm cheese, a lot of it
Some pumpkin
Chopped garlic
Nutmeg
Salt and pepper
Chicken

Instructions:
Cook the chicken in a pan with a bit of salt and pepper until done. Remove and set aside. In the same pan, melt the butter. When that is melted, add the cream and whisk to combine. Add in the garlic and pumpkin. Whisk until combined. Once the pasta is done cooking, add the chicken back in to re-warm it a bit, and toss the pasta into the sauce to coat. Season with salt, pepper and some nutmeg if that is your thing. Et voila, an extremely delicious, but extremely unhealthy dinner.
